Let's Make Everyday Taco Day

Who doesn't love a good taco? I'm from Texas and tacos and Tex-Mex is in our blood! I especially love a good taco with a margarita or a beer and a great movie. A few weeks ago I did a post on how to make desi-inspired tacos and I thought I'd share my favourite classic taco recipe!


Ingredients (Makes 6 tacos):

  • 1 packet of Black Beans or MorningStar Farms Griller Crumbles

  • 1/2 head of lettuce shredded

  • 2 tomatoes diced

  • Cheese to your liking

  • 1/2 onion diced

My Mama's Black Bean Recipe

  • In an InstantPot add 2 cups of water for each cup of black beans

  • Add about 1/2 tsp of salt

  • Pressure cook the beans for 30 minutes

  • Let the beans rest in the pot for 20 minutes after cooking

  • Carefully remove the lid and drain out the water

  • In a large bowl, add around 1-2 tbsp of taco seasoning (depending on how many beans you have), a pinch of salt, black pepper (to taste), and some Indian Chili Powder (optional).

  • Take out how much beans you would need for your tacos and freeze the rest!

MorningStar Farms Griller Crumbles

  • In a pan, cook the crumbles as instructed on the packet.

  • Add some taco seasoning (to taste) to the cooked crumbles

Directions:

  • Heat you taco shells in the oven till warm and slightly crispy

  • Assemble your tacos with the ingredients. You can even add the beans and crumble together or make separate tacos with different protein!

  • Add some salsa and enjoy!
