Hey y'all! One of my favorite meals during the summer used to be chicken wings. My dad, my sister, and I used to always go to our favorite wing place and compete to see who could eat the spiciest wings. I've been craving wings for a while now and I thought it was finally to try my hand at cauliflower wings. I've had these at restaurants and it's my favorite type of plant based wings (I try to stay away from soy based meat product solely because the texture reminds me of real meat which kinda freaks me out haha). I found a great recipe the "hot for food" youtube channel, and tweaked it to make it vegetarian instead of vegan. That being said, if you're vegan, their recipe is awesome! *Disclaimer: I take no credit for the as I followed the "hot for food" recipe but just substituted the vegan ingredients to vegetarian ones*
Ingredients:
1 head of cauliflower
1/2 C 2% milk
1/2 C water
3/4 C all-purpose flour
4 tsp garlic powder
2 tsp cumin
2 tsp Indian Chili Powder or Kashmiri Powder
1/4 tsp Himalayan Salt
1/4 tsp black pepper
Sauces:
Lousiana Orignal Wing Sauce
Garlic Parmesan Wing Sauce (I got the Kroger brand)
Hot Garlic Buffalo Wing Sauce (I got the Kroger brand)
Directions
Line baking sheet(s) with parchment paper and preheat your oven to 450°F.
Wash and cut cauliflower head into bite sized pieces/florets.
Mix all the ingredients in a bowl. The batter should be thick enough to drip but shouldn't be watery thin.
Dip each cauliflower piece into the batter and make sure to coat it evenly. There should be an excess of batter on the "wing" otherwise it won't be crispy when cooked.
Lay florets on the baking sheet
Bake for 15-25 minutes. Check the "wings" periodically and pull them out when they're a golden brown.
While the "wings" are baking, prepare you sauces by adding a bit of melted butter or olive oil so that the sauce is more spreadable.
After the first bake, take the "wings" out and coat each "wing" in you desired sauce. Then spread the "wings" back onto the pan making sure to leave enough room so that they don't over crowd.
Bake the sauce coated wings for an additional 15-25 minutes (flip along the way) and during the last 10 minutes turn the broiler on so that the "wings" are nice and crispy.
Serve
Serve your wings with some ranch, celery, and cold beer! This is the perfect summer meal to enjoy while still social distancing and being cautious of the COVID-19 virus.
**These "wings" are HOT, if you can't handle spice, be sure to use different sauces.**
