Hi guys! Time for another Eat post! These are honestly my favourite posts to write, because I love sharing new recipes and interesting ways to eat and still be vegetarian (and full)! Today's post is going to center around college friendly meal ideas that are semi quick! NGL, I always have a pack of easy mac because when midterms roll around no one truly has time to make food or sleep or breathe.... #iLoveBeingPremed. Here are a couple of recipes I love that don't take a whole lot of time :).
Egg burritos
This is hands down, my favorite thing to whip up in the morning. I make this once a week at least that I've become somewhat of a pro and it only take me about 10 minutes to whip up. I defrost the beans the night before, pop the corn tortilla in the toaster, put on a cup of tea, and whip some scrambled eggs up. Here's the recipe:
one spoonful of black beans one egg a dash of milk1/4 of a tomato and onion (diced)
In a medium bowl whisk you egg, diced veggies, and milk. In a medium sauce pan add some olive oil and scramble your eggs. Then on a hot tortilla spread your beans (warmed), eggs, and add some salsa! Have it with a cup of tea and you're off to the best start (IMO)!
Avocado Toast
I'm in Ochem Lab this semester which STARTS at 8 am (lucky me) so while I like to wake up early enough to make food (priorties lol) if i have an 8 am class I can't be bothered to wake up earlier than 6:30. One thing I have to have in the morning is a cup of tea, so while that brewing I like to toast a slice of whole wheat bread and mash up an avocado on top (I use the entire avocado because I don't want it to brown). I also add a bit of salt, pepper, and lemon juice on top! This may sound a bit basic, but honestly this is a quick breakfast and its rich in healthy fats, vitamin C/E, and omega-3.
Pesto, Parmesan, and Green Apple Pizza
Ok, so this may sound gross to people who hate fruit on pizza, but I love mixing the sweet/sour and crunch of the apple with pizza flavorings. I bought these pre made mini whole wheat pizza dough at the supermarket and all you have to do is put them in the toaster! All I did was put a layer of pesto, apple slices, and a healthy helping of parmesan on the dough and popped it in the toaster at 450 degrees and read a few pages of my textbook while it cooked. It only took about 10-12 minutes to cook so it may not be the quick lunch everyone loves but its a fun lunch to have once in awhile! I hope y'all love it as much as I do. 📷
Stir Fry
If you have a instant pot, making stir fry is so easy! I just throw all my veggies and rices into my pot and set it to the rice setting and everything is cooked! I find this recipe to be the easiest to cook especially when you have a lot of studying to do. When I get home from class knowing its going to be a long night of studying, I throw all my ingredients into the pot and study while it cooks. Then when I want to eat my stir fry, I scramble some eggs, add spices to the rice and boom stir fry done! I know stir fry normally has soy sauce, but I personally am not the biggest fan of soy sauce so I just rely on the spices I put in for flavour (red pepper, salt, pepper, garlic, cumin) and a bit of oil for some wetness.
