Eat - Bagel-which Perfection

Hello everybody! It's late in the evening (my time) and I thought it would be the best time for me to write a recipe post on breakfast - LOL. If you know me, you know I LOVE bagels. I mean I literally dream of bagel - no joke. At one point in this past semester, my insta feed was 95% bagels. Today, I was inspired by all the delicious different bagels New York City has to offer, and I decided to make my own vegetarian gourmet/DIY bagel! I hope you guys try this out and please leave a comment below letting me know your favourite recipes!

What you need:

One Bagel

Greek Yoghurt Cream Cheese

Lettuce (or Spinach)

A Couple of Mushrooms and 1/4 of an Onion

One Brown Egg


Directions:

On a small frying pan heat up some olive oil and crack the egg to make it sunny side up. Cook the egg to you liking. Personally I cook the yolk all the way through for a bagel-which.

Whilst you are cooking you egg, slice you bagel and toast it.

Once the egg has been cooked, place the egg on one side of the toasted bagel and sauté your mushrooms and onions for 5-10 minutes.

Once the bagel has been toasted, Smear the cream cheese on one side of the bagel. On the other side, place your sautéed mushrooms and onions on top of the sunny-side up egg. Then, place the lettuce on top of the mushrooms. Finally, close the bagel and enjoy!
