Hi Guys! I hope y'all are doing well! It's been a minute since I made a cooking post so i though I would make something new and share it. Last night I made a Gratain and it was so good! It's vegetarian (can be made vegan), healthy, and delicious.

Here is the recipe:
Ingredients
2 zuccini
2 squash
3 tomatoes
2 white onions
1 small box of chopped mushrooms
30 croutons (crushed)
orange juice
balsamic vinegar
parmesan and mozerella cheese (to your liking)
salt
pepper
olive oil
spices of your preference ( I used red pepper, oregano, and parsley)

Pre-heat the oven to 375F
Chop the zucchini and squash into 1 in. slices

In a large bowl, marinate the zucchini and squash with 1 tbs of orange juice, 2 tbs of olive oil, pinch of salt and pepper, and 3 tsp of balsamic vinegar.

Chop the tomatoes and onions in slices as well.

Marinate the tomatoes and mushroom with your spices.
In a medium skillet sauté the onions until they are semi brown in color.

In a large baking pan, coat the the bottom and sides with olive oil.
Then layer each vegetable. I started with the onions and then did zucchini, squash, tomato, and mushroom.

Top the vegetable layer with as much cheese as you would like. Cheese is not needed (in my opinion) so if you don't eat it, you can skip the step! I put enough cheese to cover the veggie.
Top that layer with a layer of crushed croutons - enough to cover the cheese.

Pop it in the oven for about 55 mins.
