Eat: Sweet Potato Toast

Hi everyone! Time for another food post. Food post are probably the most common post I write on this blog, but this summer I've been trying to get into healthy eating and cooking in preparation for living on my own (eep low key scared). On my last post I told you guys about my recent trip to visit my friends and we actually made Sweet Potato Toast for Sunday Brunch! This recipe tastes amazing, however the only down side is the cook time.  Personally, I wouldn't make this if it was a normal weekday, but it's a nice thing to make once in a while or when you have brunch parties.

Instructions:


Slice up an uncooked sweet potato in thin slices. BE CAREFUL! I found the easiest way was to hold the sweet potato upright and cut down vertically, but this can be dangerous. I almost nicked my finger TBH. That and i'm the clumsiest person I know, and it's probably the reason why my parents don't trust me with big knives. Put your slices of sweet potato in the toaster to toast. This step probably takes the longest because it takes forever to get the slices to be crispy. In hindsight, it may have been easier to toast them on stovetop.

 📷Cut up your toppings. So on mine, I topped the toast with a freshly cut avocado, a banana, and an apple. Thinly cut your topping so it does not weight down the toast.

 📷On the slices that you will use the banana or the apple, thinly spread some peanut butter on. Then place the topping on top of the peanut butter. Garnish with some cut up dark chocolate and almonds. For the avocado ones, lay out the avocado on top of the toast and sprinkle on some salt and pepper. Garnish with some cut up almonds.

These sweet potato toasts are a great way to start your day after a nice brunch. The sweet potato provides the body with vitamins B6, C, and D. It also is an excellent source of magnesium and potassium. Avocados provide the body with healthy monounsaturated fats and contain over 20 different vitamins and minerals including Vitamins K and E as well as Folate. Peanut butter is an excellent source of protein especially for those subscribing to the vegan or vegetarian diets. Lastly, apples are great for you because they keep the doctor away, by providing the body with antioxidants and flavonoids. 

I'm thinking of adding a nutrient fact list to each of the recipes I share on this blog as I am a nutrition major and I believe it's important for people to know what they are putting into their bodies! Side note -  I love eating healthy, but that doesn't mean I don't LOVE pizza (no joke I would eat pizza everyday) or other unhealthy foods. As I continue adding "EAT" posts to my blog I will still add nutrient info to the unhealthy foods as well just for a better understanding!

Remember work out and eat healthy to stay fit, but eat a pizza once in a while to stay sane.
