EAT - Vegan Mac 'n Cheese

Hey guys! How is everyone's day? Thank you so much for all the lovely feedback and comments <3. A couple of nights ago I tried my attempt at making a vegan Mac 'n Cheese inspired by Niomi Smart's recipe. I am not actually vegan (I am a vegetarian), however I try to eat mostly plant based foods when I can. This was such a big hit with myself and my family and you guys should definitely try it out! Fair warning, the recipe is really filling and while it is a Mac 'n Cheese dupe it isn't really trying to dupe the cheesy flavour. In fact, it tasted more like a pasta with a nice creamy sauce than with a cheesy sauce. I hope you guys try it out, and let me know what you think! What you will need:

1 cup cashew milk

1 cup soaked cashews

1/2 cup diced onions (sautéed)

1/2 butternut squash

5-7 cherry tomatoes

10 halved almonds

chopped garlic (to taste)

green chili (to taste)

salt

pepper

oregano

wheat pasta

Make:

Start boiling water and add your pasta with a pinch of salt when the water has boiled. Cook the pasta as per the instructions on the pasta box..

Steam your butternut squash until it is soft an hour before you cook.

In a blender, combine the butternut squash, onions, cashew milk, cashews, garlic, green chili, a pinch of salt and pepper, and a pinch of oregano. Blend all of these ingredients into a paste like consistency.

Once the sauce is finished and the pasta is dried and cooled. Fold in the sauce into the pasta on a medium frying pan on low heat. Once all of the sauce is incorporated with all of the pasta,  plate the pasta.

With the same frying pan, heat up some olive oil and sauté the cherry tomatoes on low heat. Add the halved almonds to the pan. Once sautéed to liking, add the tomatoes on top of the pasta.

This was a really filling pasta and the tomatoes gave the pasta and excellent sourness to the taste. While I still LOVE cheese, this is a recipe I will definitely more often!
