Hey Y'all! Time for a recipe post. I absolutely love food and I love making it as well! Being a nutrition major and a vegetarian who's working towards becoming a vegan, I'm always looking for new recipes to try that are quick and simple, being that i'm a college student. This vegan pesto pasta is my favorite pasta dish to make and it's so simple and easy to make! This is actually my mom's recipes so thanks mom!

What you will need:
- 1 box of wheat pasta
- Pesto sauce (read the label and make sure it's vegan/vegetarian)
- roma tomatoes
- 1 bag of vegetable medley mix
- 1 cup of peanuts (avoid this if you're allergic!!!)
- olive oil
- salt
- peper
- red pepper (this is optional, I personally love spicy food but too each their own)
Directions:
In a large pot boil water + a tablespoon of salt.
While waiting for the water to boil, in one large sauce pan, heat up some olive oil and sauté the vegetable medley mix, tomatoes, salt, and pepper (a pinch of both). Let the vegetables cook for around 10 minutes or until semi-soft.
Once the water starts boiling, add in the wheat pasta
Once the pasta is soft and cooked, drain the pasta and add it into the sauce pan with the sautéd veggies.
On low heat add the pesto and peanuts for one minute.
Add red pepper and any other seasoning you like!
AND WALAH! Healthy vegan pesto pasta in under 20 minutes :)

Side note- the picture posted doesn't have some of the ingredients because my friend actually made it but she took out a few of the ingredients due to preference. It's still vegan and yummy though!!
