Ok I freaking LOVE chocolate chip cookies. My favorite cookie i've ever had are actually DoubleTree cookies (if you've ever stayed in their hotels you know what I'm talking about)! With all this extra time on my hand (thx covid19), I decided to try out a recipe for chocolate chip cookies, AND THEY TURNED OUT PERFECT (and tasted like the DoubleTree cookies)!
I got inspiration from Kristen Johns chocolate chip cookie video. I originally planned on making her exact recipe, but I lacked some of the ingredients and due to the pandemic I was limited to what I had.
Here's the recipe (it's Kristen's recipe with some tweaks because I didn't have all the ingredients):
Ingredients:
1 cup unsalted butter
3 ¼ cup all-purpose flour
1 ¼ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ cups brown sugar
½ cup granulated sugar
2 eggs
2 teaspoons vanilla extract
1.5 cups of Kirkland Semi-sweet chocolate chips
1 cup of chopped walnuts
Directions:
- Preheat an oven to 365˚F
- Melt your butter in a small saucepan.
- Whisk together your dry ingredients: flour, baking powder, baking soda, and salt. Set aside.
- Pour the melted butter into a large bowl and whisk in your sugars. Add eggs one at a time to your butter mixture - whisking after each addition until just combined. Add in the vanilla extract!
- Add your dry ingredients to your wet mixture slowly. Once combined, add your chocolate chips & walnuts to the dough.
- Cover the dough in plastic wrap and let it rest for 30 mins in the fridge.
- Form dough into cookie balls & bake for 10-12 mins. (In order to prevent over-baking, use the toothpick trick to make sure the cookie is thoroughly cooked)
- Let cool on a cookie rack for 10 mins & enjoy!
